Souped-up Lentil Soup
1 can Trader Joe's Lentil Soup with Vegetables (28oz can)
1 can Kidney Beans
1 can corn
1/4 cup SoyVey Very Teriyaki Sauce
1 lb. stew beef (cubed)
Saute beef cubes on high heat with a splash of oil until outsides are lightly browned. In a large stock pot, combine lentil soup, corn (drained), kidney beans (not drained), teriyaki sauce, and sauteed beef cubes. Cook over medium heat, stirring occasionally, for 15-20 min, or until beef cubes are cooked all the way through.
This is wonderful comfort food for a cold winter evening. It goes well with a thick slice of whole-gain bread and butter (or smart balance). You can also substitute cubes of firm tofu for the beef (no need to saute, just add to the stock pot directly). This also works well over brown rice (try Trader Joe's pre-cooked brown rice).

I just read in the most recent version of Trader Joe's "Fearless Flyer" (page 22 for those of us in NJ) that they now have canned roast beef cubes in beef broth. This would make your stew even easier and less expensive!
